Easy Smoked Herrings Jollof Rice

Hello sweet team, welcome back to my channel. This is sweet Adjeley. I am so excited to see you all today and I hope everyone is doing wonderfully well., I will be sharing jollof rice made with herrings recipe, it is my mother in law recipe and I am wearing her favorite color today, this recipe is inspired by her because anytime we land in Ghana that is the one recipe I wanted from her because she makes it best, am going to try my best to replicate it to the best of my ability.

Ingredients

  • STEP 1

    I will caramelize one of my onions to intensify my flavor because I don’t have any stock to my recipe, so the caramelized onions will make it taste really good. Then I will chap up the other onion add one habanero pepper my garlic and the spice blend cube, to that am going to add the caramelized onion and go ahead and blend it.

  • STEP 2

    Now that is going on, am going to add my tomato paste so that they can start dissolving because they just came out of the freezer and then I will add my blended ingredients and I am going to cook this for about 4 minutes. While I go ahead and blend my tomatoes then I will my bay leaves and my shrimp powder, stir it up and cook it for an additional four minutes, then it will be time for me to add my blended tomatoes, homemade one, and add a bit of water, stir it up and let it cook on medium heat for about 10 minutes.

  • STEP 3

    Then I go ahead and clean the herrings so I removes most of the bones, and it also have the gut, they smoke it with the guts and I do want to enjoy that. So, once I take everything out, I wash it thoroughly. So, I wash it about two times and then am going to soak it to tender rise for about 20 minutes then I will use the water that I use to soak it in my stew for flavor. So, once I add that I am going to let it cook for about 8 minutes then it will be time for me to add my seasoning then some salt to taste and the seasoning is the shrimp seasoning, so use whatever seasoning that you prefer. so cook it for about 10 minutes, now oil has come to form at the top so I will add the herrings and I will cook it very nice and slow for about 15 minutes and I went ahead to skim some of the oil off and my stew is ready.

  • STEP 4

    So, I am going to wash my rice nicely and I do so buy washing it until the water runs clear, this ensures that I get as much starch off as possible. So then we will add our rice to the stew once we add the rice we are going to add enough water just to loosen the rice and stew up, just enough not a lot because remember less is small, then we taste for salt and add a little more if we need and this is the consistency that we want to begin with. Then I cover it bring it to a boil then I lower the heat let it cook for about 15 minutes then I will come back and stir it up, space it up so that the steam can go right through and cook it nicely and I check it periodically until its done.
